Roast Potatoes

Ingredients: 2lbs potatoes,(Yukon Gold or Russet), 3 tablespoons olive oil, 3 cloves minced garlic, 1 teaspoon dried rosemary, 1 teaspoon paprika, salt and black pepper to taste

Cook time: 50 minutes

Instructions:

Preheat the Oven to 425 fahrenheit (220C)

Prepare the potatoes by peeling them and cutting them into even chunks about 1.5 inches in size

Boil the potatoes for 8-10 minutes

Drain the potatoes, pat them dry and let them rest for a few minutes

Place the potatoes in the pot and shake them to roughen the edges

Mix the olive oil, minced garlic, salt and pepper, dried rosemary and paprika in a large bowl

Toss the potatoes in the micture until they are well-coated

Spread the potatoes in a single layer over a baking sheet or a roasting pan

Roast in the preheated oven for 30-40 minutes, turning them once

Perfect Pancakes

Ingredients: 1 and a half cups (190g) all-puprose flour, 2 tablespoons sugar, 1 tablespoon baking powder, half a teaspoon of salt, 1 cup (240ml) milk, 1 large egg, 2 tablespoons melted butter

Cook time: 20 minutes

Instructions:

Prepare the dry ingredients by whisking the flour, sugar, salt and baking powder together in a large bowl

Prepare the wet ingredients by whisking the milk, egg and melted butter together in a separate bowl

Combine the wet and dry ingredient mixes and stir until there are few lumps in the mix

Heat a non-stick pan over medium heat

Add some butter to the pan, wiping off excess butter with a paper towel

For each pancake pour 1/4 cup of batter onto the pan and cook until bubbles form and the surface and the edges are set, thi should take 2-3 minutes

Flip the pancake until it is golden brown on both sides

Banana Bread

Ingredients: 1 and a half cups (190g) all-purpose flour, 1 teaspoon baking powder, half a teaspoon baking soda, half cup (115g) unsalted butter, half cup (115g) gransulated sugar, half cup (115g) packed brown sugar, 2 large eggs, 4 ripe bananas, 1 teaspoon vanilla extract

Cook time: 1 and a half hours

Instructions:

Preheat your oven to 350 Fahrenheit (175C). Grease a 9 x 5 inch loaf pan

Prepare the dry ingredients by whisking the flour, baking powder and baking soda together with a pinch of salt

In a different bowl, beat the butter, granulated sugar and brown sugar together until teh mixture is light and fluffy

Beat in the eggs with the butter mixture, and mash the bananas and vanilla extract

Add the mashed bananas to the butter mix

Gradually add the dry ingredients to the banana mixture, stirring until both are fully combined

Evenly pour the batter into the prepared loaf pan

Bake for 60-70 minutes, until teh outisde of the loaf is lightly browned
